We know how important it is to have quality, wholesome food for our family, and want you to have the very best for yours. We guarantee that your USDA inspected beef will arrive at your specified shipping address in wholesome condition, either still frozen or chilled. You will receive the quoted weight that you ordered, or more.

If your order arrives in anything less than our guaranteed condition, please contact us within 1 business day of delivery for a replacement or La Vaca Meat store credit. Prices are subject to change at any time without prior notice.

Is your beef grass fed?

Most of our beef comes from cattle that are grass fed for the majority of their lives and then finished on grain. The finishing period, which is the last four to six months of the cattle's life, is the only time when our cattle are kept in a feedlot. While in the feedlot, the cattle are closely monitored and fed a diet of alfalfa and grains. Moving the livestock to the feedlot is necessary to improve the quality of marbling and flavor of beef that we serve our customers. We do offer 100% grass fed options, meaning the cattle are grass fed their entire lives and never given any grain.

What grade of beef do you sell?

While there are eight quality grades for beef, the top three grades recognized by the U.S. Department of Agriculture are Prime, Choice, and Select. Beef that receives the designation of USDA Prime grade is the highest quality of beef available. Prime beef has the most marbling, followed by Choice grade, and finally Select grade beef. We are proud to serve our customers the highest quality beef, selecting cuts that are USDA Prime, upper 2/3 Choice (which we refer to as our Top Tier Choice), All Natural Choice, or All Natural Grass Fed. 

What are beef quality grades?


Beef Quality Grades

Beef is evaluated and separated into different grades based upon marbling and maturity of the meat. These factors help deduce the tenderness and flavor of the final product.

USDA Prime

Graded to be the most juicy, tender and flavorful of all the grades, Prime grade cuts have the most abundant marbling from younger and well-fed cattle.

USDA Choice

Choice is still considered a high quality grade, that's still very tender and great for grilling. La Vaca designates its Upper 2/3 Choice grade as our Top Tier, so you know you're getting the highest quality Choice grade.


La Vaca chooses only Choice grade or better for our Natural Steaks. Our Natural Steaks have never been treated with anitibiotics, artificial flavors or added hormones. Ever.


What is the difference between wet-aged meat and dry-aged meat?

Wet-aged beef is vacuum sealed and allowed to sit under refrigeration just above freezing point. The vacuum seal allows for the retention of moisture and leads to a more flavorful cut. Dry-aged beef is hung in a refrigerated cooler and is not sealed. Therefore, the original moisture is allowed to escape and consequently the original texture of the beef is compromised.

When should I remove the plastic wrap around my steak?

Do not remove the plastic wrap until you are ready to cook your steak. The plastic wrap should be left on during the thawing process.

How long will my steaks last in the freezer?

For optimal flavor, we highly recommend eating your steak within one year of its purchase. After this point the taste and tenderness will begin to proceed through a natural phase of digression. Once you have tried one of our steaks, you will not be able to keep them in your freezer very long anyway.

Is it possible to refreeze any of the beef?

As long as the beef is cool to the touch and has not been removed from the original plastic wrap it is possible to refreeze.

If my steak appears to be partially thawed, is it still good?

Yes. As long as the beef is cool to the touch and has not been removed from the original plastic wrap, the quality will be retained. If it appears to be partially thawed, you can refrigerate or refreeze any steak until you are ready to eat.

How should I cook my steak?

We highly recommend that your steaks be grilled or broiled. If you cook our steaks using either of these methods, you will be ensured the very best quality.

What is the best way to grill your steak?

After the meat has been thawed to room temperature it should be sprinkled with our Original La Vaca Seasoning. Once placed on the grill it should be seared on high for one to two minutes on each side. After searing, reduce the heat to medium and allow your steak to be grilled until the desired temperature has been met. Every steak will be grilled based on the thickness of the cut; however, you can use these internal temperatures as a guide: 120°-130° for a rare steak, 130°-140° for a medium rare steak, and 140°-150° for a medium steak.

Shipping Information

La Vaca ships all packages at a flat $30 rate for 2-day Air via UPS to ensure quality, freshness and reliability. That means, a small order will ship for the same cost as a large order. We ship all products Monday through Wednesday only. Any orders placed by 12am on Wednesday-Sunday, will ship first thing Monday. Please make sure to note the time and day the shipment should be arriving at your residence. Items should be frozen or cold to the touch when they arrive. Note: We do not ship to P.O. Boxes.
